Man was I in the mood to have a plate of nachos for dinner a couple of weeks back. Yeah I said it, nachos for dinner. So basically I went though my fridge, and anything that looked like it might go on top of a plate of nachos, was used for these nachos(which included a lot of leftovers from earlier in the week). So here was what I ended up using for these nachos from the bottom up:
- Yellow corn tortilla chips
- Shredded mild cheddar cheese
- Shredded mozzarella cheese
- Leftover taco meat
- Leftover cooked bacon
- Bottled salsa
- Romaine lettuce
- Sour cream
More or less I stacked up the nachos in that order. I ended up microwaving this hot mess for a couple of minutes at 50% power. While of course excluded all the cold items (salsa, lettuce and sour cream), until after the microwave got it all good and hot. Since nothing is worse then hot and soggy lettuce. Could I have done this in the oven? You bet. But since its summer time right now, and I haven’t put in the window a/c unit at my house. The less that I need to use the oven, the better for keeping me and the house cool.

I do have a toaster oven, one of those Black & Decker Toast-r-ovens. But it ended up falling on the kitchen floor a couple of months back, so now it operates on a sporadic basis.
You need a toaster oven, perfect for this time of year when you want hot crispy goodness…
